Double Baked Potato

We love our simple baked potatoes a lot because of their simplicity, but we love our double baked potatoes twice as much. A combination of cheesy mashed potatoes and a crispy outer shell, topped with sour cream, crispy bacon and fresh green onions. What’s not to love here?

Sure, it’ll take a moment to put them together but they’re so worth it! You may have heard someone say before that recipes that take a while to make are the most flavorful, well this is it. This double baked potato is loaded with flavor! The perfect side dish that not only tastes great but is eye catching too.

Side Note: These are great to prep ahead of time for a party or gathering just do not reheat the second time right away, Cover with plastic wrap and reheat when you’re ready then garnish right before serving.

Ingredients:

3pc large Russet Potatoes

2Tbsp Olive oil (or any oil)

1.5tsp Kosher Salt

Pinch of Black Pepper

3Tbsp Sour Cream

3Tbsp Milk

2Tbsp Unsalted Butter

1/2cup Mozarella Cheese

Garnish:

6-8tbsp Sour Cream (1-2tbsp for each half)

1/3cup Crushed bacon (FRY YOUR OWN)

1/4cup chopped Green Onion

Instructions:

1. Heat your oven to 400F, rub oil all over the potato and bake in the oven on the middle rack for 50min- 1hr. (Until tender) **Do not cover the potatoes with anything**

2. Take the potatoes out of the oven and cook the bacon at 400F for 10-15min or until crisp. (or cook it on the stove top) **If possible, avoid using packaged dry bacon or bacon bits as the taste and flavors will not be the same**

3. When the potatoes are cool enough to handle, cut each potato in half lengthwise, and scoop out the inside flesh with a spoon leaving the skin intact.

4. To the scooped out potato flesh, add the rest of the ingredients such as 1.5tsp salt, pinch of pepper, 2TB butter, 3TB sour cream, 3TB milk, 1/2cup mozarella cheese and mash everything together with a potato masher or a fork (for chunkier pieces) to combine or until creamy.

5. Fill the potato skins back with the potato mixture and reheat in the oven at 350F for 15min.

6. Remove from the oven, add 1-2Tbsp sour cream on top of each half and garnish with crushed bacon and green onion.
