These open-faced sandwiches can be prepared for a tasty and satisfying breakfast or midday snack. I like them because they are filling and easy to make. When they are cooked in the oven, they get a lightly crispy crust on the bottom as if you’re eating a freshly toasted crouton. Good food is something my family looks forward to every day and this bologna cheese sandwich is one of those easy recipes that can satisfy everyone on its own or served with a bowl of soup.
The filling consists of 5 ingredients and is perfect to make in advance. If i know i will be serving these for breakfast the next day, i can easily mix it together the night before, cover it with plastic wrap and have it ready in the fridge for morning.
Breakfast Quesadillas with the same garlic bologna cheese mixture:
This filling also pairs well with flour tortillas and i have served it for breakfast that way many times as well. To make these, you’d simply add this bologna-cheese mixture between two flour tortillas and toast them on both sides on a nonstick pan on medium heat, preferably with a lid on. It is ready when you have melted cheese and toasted crispy tortillas. Cut into serving portions with a pizza cutter.
This recipe makes about 28-30 sandwiches (1 whole baguette) Divide or multiply the recipe as needed.
