
Add 1 Tbsp of coconut oil to a pan and toast the crispy kataifi until they are golden brown in color. (Be careful not to burn) Remove from heat and transfer to a deep bowl.
Toast 160g (about 1 cup) of hazelnuts until they have lightly golden brown spots here and there. Add to the same bowl.
Add 160g of Nutella and 45g of tahini sauce to the bowl.
Add a pinch or 2g of pink salt and mix everything together to combine.
Melt and temper chocolate and carefully fill the silicone mold with melted chocolate using a measuring cup or a spoon. Fill the mold quickly and evenly aiming to cover all the details of the cavity. Then gently tap the mold on a flat surface to release any air bubbles and scrape off any excess chocolate along the edges.
Place the mold in the refrigerator to set quicker. It is ready to be filled when all the chocolate has hardened.
Fill the mold with the hazelnut nutella filling the best you can gently pressing to avoid any hollow spots.
Pour the remaining chocolate over the filling and spread as even as you can. Clean the edges one more time before the chocolate sets.
Place back in the fridge until the entire chocolate bar has hardened.
Remove the chocolate from the mold and ENJOY!

I have found my perfect combo by combining callebaut dark and milk chocolate callets. Using just milk chocolate is too sweet to my liking (especially with a thick chocolate bar mold) and only dark, my husband and kids didn't like it so we found our perfect middle. You can try your own combination of high quality chocolates as long as you stick to the right proportions.
I always purchase these blanched, roasted hazelnuts and keep them in my freezer to preserve freshness. Right before using, i toast the nuts even more on a pan until they develop slightly golden brown spots. This enhances the flavor of them and makes the chocolate taste even better.
