Mini Shuba Appetizer

Ingredients

  • 2 medium potatoes cooked
  • 1 medium carrot cooked
  • 1 large beet cooked
  • 1/3 cup Sweet onion diced
  • Mayonnaise
  • salt & pepper to taste
  • Herring or sprats

Instructions

  1. Cook potatoes and carrot until fork soft. Allow to cool and peel off the skins.

    Separately cook 1-2 beets until fork soft. Peel off skins. (use a paper towel to help)

    Once beets are cooled, grate then into a bowl, add diced onion and season with a pinch of salt, sugar and 1-2 Tbsp of mayonnaise to your taste.

    Slice potato into even slices about 1/4" thickness, season with a pinch of salt and drizzle a little bit of mayonnaise on each slice.

    Follow with a slice of carrot, then add about 1Tbsp of the beets mixture.

    Top it off with a slice of herring or sprats.

    Garnish with greenery if desired.
