Easy Homemade Dumpling Soup Recipe -Soup with Pelmeni

A hearty bowl of soup isn’t only for comfort when it’s soup season in the winter time or cold days, it is just as comforting any other day in any season. This dumpling soup recipe is very versatile with basic ingredients and as with most dishes, the recipes vary from cook to cook and from region to region.

Easy soup recipes need to be in every home cooks collection. Anyone can agree that easy and delicious soup recipes are the best soups. Every home cook has their own version of dumpling soup. In fact some even call it potsticker soup. My version of this soup requires simple ingredients which most are pantry staples. It is such an easy meal, i turn to it over and over again. It doesn’t require any sauteing or any prep in advance and i love easy recipes like that.

Next time you’re at a grocery store like Trader Joe’s or any other that sells frozen dumplings, pick up a pack in the frozen food section of your grocery store and give this soup a try.

What can i serve with dumpling soup?

This soup pairs well with just a fresh slice of bread but we especially love this easy dumpling soup recipe with our cheesy garlic bread or our garlic dinner rolls. The combination of the two makes it a perfect meal.

What kind of dumplings can i use for this soup?

You can use any of your favorite dumplings. Our favorite ones are chicken flavor or homemade dumplings. Some other great ones to consider are vegetable dumplings, pork dumplings or even frozen potstickers.

Whichever soup dumplings you decide to use, be sure to stay near not to over cook them or else they may fall apart and leave you with a mushy mess.

You know you have are cooked through perfect dumplings once they are puffy and float.

Can i use broth or stock instead of bouillon cubes?

Yes, you can use chicken broth, homemade broth, bone broth or even better then bouillon if you don’t have bouillon cubes they all make a good soup base and give soup it’s bold flavors. Keep in mind that all stocks and broths as well as bouillon cubes have a different sodium content so adjust the amount you use according to your taste. Add a pinch of salt at a time and taste before adding more.

What you need to make dumpling soup:

  • 6 medium large potatoes (cubed)
  • 1 small onion (diced or whole)
  • 1 medium carrot (shredded, cut in circles or cubed)
  • 1lb of pelmeni (dumplings)
  • 2 garlic cloves (pressed)
  • 2.5L of water (10cups)
  • 2-3 bay leaves
  • 4 Bouillon cubes
  • Salt + Black Pepper to taste
  • Greens to taste ( fresh dill, fresh parsley & scallions)

Notes:

  • Adding fresh garlic and fresh greens to this soup gives it that bold fresh flavor that just brings everything together. Highly recommend not skipping out on it.
  • Sauteing onions and carrot on a skillet before adding to the soup is a bonus flavor that may give the soup a little sweeter and deeper flavor.

How to make easy dumpling soup:

  1. Peel, wash and cube the potatoes and add to a deep large pot together with diced onion and cut carrot.
  2. Add water, bouillon cubes, bay leaves, salt and pepper to taste and bring the water to a boil on medium high heat. (May also add about 1Tbsp of olive oil -Optional) Cook the potatoes until they are semi done. Give the liquid a taste and add more salt and pepper if needed.
  3. At this time add the dumplings (pelmeni) and cook for additional 10-15 minutes or until you have tender dumplings and potatoes. Cooking time varies depending what dumplings you use and how big or small you cut your potatoes.
  4. Add pressed garlic, chopped greens such as dill, fresh parsley, green onions and turn off the heat. Allow the dumpling soup to sit for at least 20-30 min before eating to allow all the flavors to come together for a deeper flavor.

Ingredients

Super simple to make! I love the unique combo of pelmeni in a soup (never tried it before). I always have frozen Pelmeni, carrots, and potatoes in the house; I feel this will be a fall-back meal if I can’t think of what to make for dinner.
