BBQ Compound Butter (Ruth’s Chris Steak House Style)

This copycat recipe of flavored butter is the secret ingredient in Ruth’s Chris steakhouse BBQ Shrimp appetizer. BBQ compound butter has no barbecue sauce in it. Instead, it is fresh butter that is infused with garlic, cayenne pepper, paprika, a splash of Tabasco sauce for it’s mild spice and Worcestershire sauce. If you have never tried Ruth’s Chris barbecue shrimp, it is a must! Ruth’s Chris steak house serve these BBQ shrimp as an appetizer with crusty bread or main course meal with mashed potatoes. It is heavenly.

BBQ Compound Butter Recipe Ingredients:

  • 8oz or 16TB of Salted softened Butter
  • 1/2tsp Paprika
  • 1/2tsp Cayenne pepper
  • 1tsp Tabasco Sauce
  • 4TB Worcestershire Sauce
  • 1tsp (1-2cloves) of fresh Garlic (pressed)

Don’t have salted butter?

No problem! Use unsalted butter and just add a pinch of salt.

Instructions:

Into a deep bowl add 16Tbsp of softened salted butter, 1/2tsp of paprika, 1/2tsp cayenne pepper, 1tsp of Tabasco sauce and 1-2 cloves of pressed garlic (or 1tsp)

Using a fork or a hand mixer, mix everything together to combine. If you will be using a hand mixer, be careful not to over whip the butter, you just want to bring all of the ingredients together and that is it.

Be sure that the butter is softened at room temperature, otherwise you will not be able to incorporate the ingredients properly.

Make ahead and store:

You can make this butter and use right away if you need it OR store it in the fridge or freezer for later use. When i make this compound butter, i always double the recipe and store in my freezer. I love having it on hand.

What i have found convenient is to lay out the butter on a cutting board lined with plastic wrap (for easier clean up) or baking sheet lined with parchment paper and using a cookie scoop that measures 1Tbsp.

Place the scoops of butter in the freezer until completely frozen and then transfer the butter into an airtight container and store in the freezer. This makes it easy to know the amount of tablespoons you need for a recipe.

The recipe in the video is doubled. I love to have this BBQ compound butter on hand in my freezer.

I’ve really enjoyed experimenting with this flavored butter and you can make so many delicious recipes with it. The latest one I’ve done was salmon steaks and i absolutely loved the end result.

I seasoned both sides of the salmon steaks with salt and pepper, and sear in plain butter on both sides. Then add a splash of white wine, heavy whipping cream and this BBQ butter. Incorporate the butter into the sauce, reduce a little bit and turn off the heat. I love to garnish my dishes with fresh herbs but this recipe just goes so well with green onions. The results were mouthwatering.

Next time i will make this with skinless, boneless salmon pieces. The steaks were difficult for my kids to enjoy.
