Quick dinner- Rice with Beef

This recipe is very similar to fried rice or plov but my very own easy version of a quick lunch or dinner. This is another recipe that calls for my baked beef in the oven. Because i always have that beef meat on hand, it is a life saver on busy days. This dish comes together in under 30 minutes and if you do have leftovers, it reheats very well too.

Ingredients:

1 cup of Rice

1/4 cup Olive oil

1-2 cup Baked Beef Meat

1 medium Onion

1-2 cloves Garlic

2 cups of Water

2-3 dry Bay leaves

1 Tsp of Salt

1/8 tsp of Black Pepper

1. Wash the rice very good under cold water, draining the water and washing some more until the water runs clear.

2. Preheat a deep skillet or a wok, add the oil.

Chop the onion and add that to the skillet together with the baked beef.

2. Cover with a lid and let it saute until the onions are soft.

3. Once the onions are soft, add the remaining ingredients such as the washed rice, garlic, salt, pepper and bay leaves.

4. Add the water, Mix well and cover with a lid. On low heat let it simmer for 12-15 minutes or until most of the liquid is gone and the rice is cooked through.

Mix again and serve!

Garnish with fresh parsley if desired.
