Chicken Kotleti with Rice

  • 2 lb Ground Chicken Thighs
  • 3 cups Cooked Rice (1cup of Uncooked)
  • 1 medium Onion (grated)
  • 3 Eggs
  • 2 Tbsp Mayonnaise (heaping tablespoons)
  • 1.5 tsp Kosher Salt
  • 1 tsp Black Pepper
  • 3/4 cup Plain Bread Crumbs
  • 3/4 cup All Purpose Flour
  • 1/2 cup Grapeseed Oil (for frying)


  1. Into a large deep bowl, add all of the ingredients EXCEPT the bread crumbs and flour.

    Mix everything very well with your hand to combine, add more salt and pepper if needed.

    In a separate bowl, combine bread crumbs and flour, mix to combine.

    Using a cookie/ice cream scoop, scoop up the mixture and place it into the dry mix. TIP: Dip the scoop in water in between a few rounds to help remove the mixture from the scoop and form neater balls)

    Coat each patty with the dry mixture and form a round flat patty. Place on a cutting board covered with plastic wrap. (This helps to prevent the patties from sticking to the cutting board and helps to easily pick it up)

    Preheat a large skillet on medium-low heat, add about 1/2 cup of oil (for 12"Skillet, less if using a smaller one) and then add your patties. Fry on both sides until golden brown.
