Easy Layered Spring Mix Salad

I threw this salad together for one of our weeknight dinners and i thought, maybe i can share it with you guys, but then my mind argues otherwise and says it’s so simple and easy to put together, its not even a recipe so to speak, is it even worth it? 🙂 However, the last time i posted this salad on my Instagram stories, a handful of you reached out and thanked me for the idea. So i figured this easy non recipe salad should have it’s space here and especially with the holiday hassle coming up, i figured it might come in handy for some of you.

The ingredients are simple and accessible year round in stores. (USA) Although i love this salad with heirloom tomatoes, the chances i will have heirloom tomatoes in my house are not as high as having campari tomatoes, so i used just that because i want this salad to be the one you can throw together anytime, with short prep time, and still look beautiful.

You can put it together for gatherings, potlucks, make the platter big or small depending how big your company will be. The dressing is also versatile, you can use the one i had on hand or any other vinaigrette dressing you love. Salads in general are mainly all versatile, add whatever you want and season it to your taste, its YOUR salad.

I think this Panara Bread Fuji Apple dressing (picture below) goes well here and would make a perfect combination of apple flavor to your slice of turkey and mashed potatoes. My other favorite is Briannas rich poppy seed dressing.(picture below) (Get them both at Fred Meyer store)

Ingredients:

Spring Salad Mix

Cucumber

Tomatoes (Campari or Heirloom are best)

Onion (optional)

Salad Dressing (Panera Bread Fuji Apple or Briannas rich Poppy Seed)

Instructions:

  1. Wash and slice tomatoes and cucumbers, arrange the spring mix and tomatoes with cucumber in lines on a platter rotating to make a beautiful visual. Add slices of onion on top or add them in between sliced tomatoes. (You could also add mozzarella slices or mozzarella pearls if you wish)

Drizzle the dressing right before serving. DO NOT add the dressing in advance. The lettuce is so delicate, it will wilt down with time and not look very appealing. Leftovers of this salad do not withstand in the fridge either.

TIP: Make 2 separate platters and keep one covered in the fridge. If one gets eaten, you can replace with the other platter in a second. If you wont need it, it can last another day or so in the fridge for another dinner.

  • 5 oz Spring Mix
  • 5-6 Campari Tomatoes
  • 1/2 English Cucumber
  • 1/4 Sweet Onion (Optional)
  • Panera Bread Fuji Apple Dressing or Briannas Poppy seed dressing
