Mini Shuba Appetizer

If the traditional shuba (herring under fur coat) seems too ordinary for you, serve it differently. If you love shuba, you’ll love this single serve shuba appetizers. If you don’t already know, shuba is known as herring under fur coat salad which includes diced pickled herring and topped off with cooked vegetables. Typically this way of serving is the same thing yet turns an ordinary cold fish salad look like a culinary masterpiece. Here i have a slice of cooked potato on the bottom followed by carrot and grated beets salad and i top it off with a slice of herring to complete the look and make it’s statement piece. They look like canapes but taste like shuba.

If you are not a fan of pickled herring, you may substitute with canned sprats in oil. I have done both and love both of them.

The ingredient amount varies depending on how many you want to make. I used 2 medium sized potatoes to get 9 even slices, i do not use the ends.

You will need:

2 cooked medium size potatoes

1 cooked medium carrot

1 cooked large beet root

1/3 cup diced sweet onion

Mayonnaise- to drizzle potato and mix beet salad

Instructions:

Cook potatoes and carrot until fork soft. Allow to cool and peel off the skins.

Separately cook 1-2 beets until fork soft. Peel off skins. (use a paper towel to help)

Once beets are cooled, grate then into a bowl, add diced onion and season with a pinch of salt, sugar and 1-2 Tbsp of mayonnaise to your taste.

Slice potato into even slices about 1/4″ thickness, season with a pinch of salt and drizzle a little bit of mayonnaise on each slice.

Follow with a slice of carrot, then add about 1Tbsp of the beets mixture.

Top it off with a slice of herring or sprats.

Garnish with greenery if desired.

Note: It is best to add the slice of herring the day of serving because it will color on the bottom (unless you don’t mind) It looks more presentable that way. (I took some photos the day after and you can see on the image that the herring has colored on the bottom)
