No-Bake Wafer Cookie Cake in 30 min

This cake recipe is essentially just layers of chocolate wafers softened by whipped vanilla cream, and when it is left to set in the fridge, the moisture from the cream gets absorbed by the cookies, which turn soft and cake-like. Very simple but it makes an impressively delicious and humble dessert.

You don’t need a lot of ingredients or time to make something decadent. About 30 minutes of hands on time and you have a quick cake ready for that last minute dessert when you need it. I like to keep a stash of these Nabisco wafer cookies in my pantry for days when i need a dessert but don’t have the time or desire to bake anything fancier. On the norm i would use these wafers to make my refrigerator roll or these no bake mini cakes. This time i decided to use the same wafer cookies but turn it into a cake using a slightly different cream. I had visitors come by the day after and this cake quickly flew off the table.

I used two 9oz Nabisco wafers packages for a 4-5 inch cake height (8inch pastry ring) but you can use more packs if you want a higher cake.

This cake looks pretty enough with no additional decor but you can take a step further and ice it and decorate it to you preference. Your guests may not even guess that it is a cookie cake.

Ingredients:

2-9oz packages of Nabisco Chocolate Wafers

Cream:

16oz sour cream

8oz cool whip

3/4can of condensed milk

1cup Heavy Cream

1tsp Vanilla Extract (optional)

Instructions:

1. Add all of the cream ingredients at once into a mixing bowl and turn the mixer on “stir” option to bring them all together, then slowly increase the speed to medium-high and whip until thick.

2. Using an 8inch round pastry ring, add about 1 tablespoon of the cream to the bottom of the cake stand or cake board then start arranging cookies. (adding cream to the bottom will prevent the cookies from sliding around)

3. Add about 2-3 heaping tablespoons of cream between each layer of cookies until you use up two packs. (add more cookies for a higher cake)

4. Refrigerate for a couple of hours then remove the pastry ring and decorate the cake to your preference.
