Chicken Kotleti with Rice
Kotleti are a classic Ukrainian dish made with ground meat and formed into oval patties and served usually with a side of mashed potatoes, grains or pasta. There are many different options to play with while making kotleti, whether you’re using a mixture of ground meats, using bread crumbs or soaked bread, or adding vegetables of some sort.
This recipe is pretty basic and is fairly close to the original version but instead of using bread, i use cooked rice for a great twist.
You will need:
2lb Ground chicken thighs
3cups of cooked rice (1 cup of uncooked)
1 medium Onion (Grated)
3 Eggs
2 Heaping Tbsp of Mayonnaise
1.5tsp of Kosher Salt (or to taste)
1tsp of Black Pepper
3/4cup Plain Bread Crumbs
3/4Cup All purpose Flour
1/2cup of Grapeseed Oil (for frying)
Instructions:
- Into a large deep bowl, add all of the ingredients EXCEPT the bread crumbs and flour.
- Mix everything very well with your hand to combine, add more salt and pepper if needed.
- In a separate bowl, combine bread crumbs and flour, mix to combine.
- Using a cookie/ice cream scoop, scoop up the mixture and place it into the dry mix. TIP: Dip the scoop in water in between a few rounds to help remove the mixture from the scoop and form neater balls)
- Coat each patty with the dry mixture and form a round flat patty. Place on a cutting board covered with plastic wrap. (This helps to prevent the patties from sticking to the cutting board and helps to easily pick it up)
6. Preheat a large skillet on medium-low heat, add about 1/2 cup of oil (for 12″Skillet, less if using a smaller one) and then add your patties. Fry on both sides until golden brown.
These kotleti are great paired with a side of mashed potatoes and a fresh salad, though they are also just as great on just a slice of bread with a drizzle of ketchup or sriracha for some heat.
