Loaded Tomato Slices

These loaded tomato slices take me back to my childhood. Though I was not a big fan of them then, I am now. These tomatoes can be served as a salad or an appetizer, however I can eat them as a mid-day snack too. They are great to make year round but are best with garden tomatoes or when tomatoes are in season.

The original recipe requires you to mix garlic with mayo then spreading over the tomato slice and sprinkling grated cheese on top. There! Easy and delicious. Though after making them over n’ over again for years, i tweaked a couple things and tried something different and new… long story short, we loved the results and i just had to share it here.

Ingredients:

Large Tomato

Mayonnaise

Everything bagel seasoning

Mozzarella Cheese (or your favorite grated cheese)

Smoked Salmon (optional)

Macro Greens (optional)

Instructions:

Cut the tomato into thicker slices (about 1/4″), Spread a dollop of mayonnaise onto each slice, sprinkle everything bagel seasoning and top it off with grated mozzarella cheese.

Note: If your tomato is very juicy, place the slices on a paper towel before applying mayonnaise, this will help the mayo stick to the tomato slice better.

You could stop there, OR make them even fancier and finish off with a smoked salmon rosette and some greens.

They are best served right away.
