BBQ Compound Butter – Ruth’s Chris Style

This flavored butter is the secret ingredient in Ruth’s Chris BBQ Shrimps recipe. It is infused with garlic, cayenne pepper, paprika, a splash of Tabasco sauce for it’s mild spice and Worcestershire sauce.

Though this butter is used in the shrimp recipe linked, it can also be used in many others based on your creativity. It lifts up the dishes in a way that you’d never imagine.

Ingredients:

8oz or 16TB of Salted Butter (softened)

1/2tsp Paprika

1/2tsp Cayenne pepper

1tsp Tabasco Sauce

4TB Worcestershire Sauce

1tsp (1-2cloves) of fresh Garlic (pressed)

Instructions:

Into a bowl add 16Tbsp of softened salted butter, 1/2tsp of paprika, 1/2tsp cayenne pepper, 1tsp of Tabasco sauce and 1-2 cloves of pressed garlic (or 1tsp)

Using a fork or a hand mixer, mix everything together to combine.

You can make this butter and use right away if you need it OR store it in the fridge or freezer for later use.

What i have found convenient is to lay out the butter on a cutting board or baking sheet using a cookie scoop that measures 1Tbsp. Place the scoops in the freezer until completely frozen and then transfer the butter into a container and store in the freezer. This makes it easy to know the amount of tablespoons you need for a recipe

I’ve really enjoyed experimenting this flavored butter with seafood such as these seared salmon steaks.

Simply season both sides with salt and pepper, then add a splash of white wine, heavy whipping cream and this bbq butter. Incorporate the butter into the sauce, reduce a little bit and turn off the heat. The results were mouthwatering.
