Pita Pizza
The idea of this post was to help busy parents serve up a quick meal using whatever ingredients you may already have in your fridge. While not every household may have red pizza sauce on hand, most households will have ketchup and mayonnaise and that is the sauce i use here. (With a little boost of sweet n’ sour, optional) I learned this from my mom when she used to make her home style pizza for us in my childhood years.
While the ingredients i used are super simple, this pizza packs a punch and the flavors come together so well. It is currently my favorite combination, though you may adjust them to your liking’s.
Ingredients: (for 6-7 pizzas)
- 6-7 flat pita bread
- 2 cups shredded Bologna (may substitute with chicken)
- 2 cups chopped onion
- 2 cups shredded carrot
- 2 cups sliced bell pepper (any color)
- 2-3Tbsp of Oil (any)
- Pinch of salt & pepper
- 2-3 cups Mozzarella Cheese
- 1 can Sweet Kernel Corn
Sauce:
- 1 cup Mayonnaise
- 1/3 cup Ketchup
- 1/4cup Sweet n’ Sour Sauce (optional, but recommended)
In a small mixing bowl, combine mayonnaise, ketchup and sweet and sour sauce if you have any on hand, until everything comes together.
Instructions:
- Dice an onion, shred the carrot and slice the bell pepper. Then heat a skillet, add about 2-3 Tbsp of oil and saute the vegetables all together for about 5 minutes on medium heat. Season with a pinch of salt and pepper and take off the heat.
2. Begin to top your pizza. Add about 2 heaping tablespoons of sauce and spread around, follow by shredded bologna, sauteed vegetables, canned corn and finish off with mozzarella cheese.
Bake in a preheated 350F for 12-15minutes.
Enjoy!
