Pomegranate Jello Recipe With Fresh Raspberry (Easy)

This isn’t your typical packaged jello recipe, but it is just as easy to make. I made this jello to my family’s recent gathering and everyone loved it so much i was reminded over and over again that this needs to be posted up on my blog. The last 3 times that i made it, i was left with zero leftovers, not to mention i always double the recipe (kids love gelatin recipes). After just a little tweak to the original packaged jello recipe, this takes it over the top. A definite crowd pleaser with minimal ingredients that can be made for holidays, events and potlucks or just a weekend dessert.

Plain packaged jello mix is too boring just on its own, but adding pomegranate fruit juice instead of plain cold water makes a very big difference. Not only does it make the jello taste better, it makes this pomegranate dessert healthier too especially with the addition of fresh fruit. I don’t know any other healthy desserts 🙂

My recent studies taught me that pomegranates and pomegranate juice are packed with antioxidants, which help prevent or delay cell damage. Pomegranates also are a good source of fiber, vitamin C, and vitamin K. It helps improve digestion and increases blood flow which gives your skin a radiant glow. So there you have it, drink POM juice or just eat this Jell-O. 🙂

Highly recommend you giving this pomegranate gelatin dessert a try the next pomegranate season. We love this tasty dessert so much that even when it is not pomegranate season, we can still purchase POM juice at local grocery stores and use only fresh raspberry as the fruit without the addition of pomegranate arils.

Whether you choose to make a batch and pour it into a large serving dish or pour into individual dessert cups, both are equally delicious.

If you are serving a large crowd or bringing this jello to an event, i highly recommend separating into individual dessert cups. It is easier to serve, everyone gets the same portion to try this great dish and it takes a little bit of stress off your shoulders wondering if it’ll be enough.

Why do i need to add more gelatin?

Acidic ingredients tend to soften gels, so you may need to use more gelatin when working with them. Pomegranate juice is more acidic then plain water so if you skip the extra gelatin, your jello may be too soft.

How long does pomegranate jello last in the fridge?

It can last 3-4 days in the fridge. Keeping it longer, the fresh fruit may begin to wilt down and rot.

Ingredients:

  • 6oz Cherry Jell-O (strawberry or raspberry will work too)
  • 1Tbsp Knox Gelatine (unflavored)
  • 2cups Boiling Water
  • 2cups POM Pomegranate Juice (or pomegranate-cherry)
  • 2 cups Fresh Raspberries
  • 1 cup Fresh Pomegranate Seeds

Instructions:

Do NOT follow Jell-O package instructions for this recipe!

1.Whisk together 6oz package of jello with 1 tablespoon of unflavored powder gelatin to combine, then add 2 cups of hot water. Stir well until it is fully dissolved.

2.Add 2 cups of cold POM pomegranate juice to the mixture and whisk it in. Pour the mixture into a large bowl or serving dish or individual cups.

3.When the jello is no longer warm, add raspberries and pomegranate seeds and refrigerate until it sets. (2-4 hours)

This jello is a statement piece even though it’s just jello. You’ve leveled up basic jello by far and it’s currently my favorite dessert to bring to potlucks and baby showers.
