Pomegranate Jello

This isn’t your typical packaged jello recipe, but it is just as easy to make. I made this jello to my family’s recent gatherings and everyone loved it so much i was reminded over and over again that this needs to be posted up on my blog. The last 3 times that i made it, i was left with zero leftovers, not to mention i always double the recipe. After just a little tweak to the original packaged jello recipe, this takes it over the top.

Plain packaged jello is too boring, but adding pomegranate juice instead of plain water makes a very big difference. Not only does it make the jello taste better, it is much healthier too. My recent studies taught me that pomegranates and pomegranate juice are packed with antioxidants, which help prevent or delay cell damage. Pomegranates also are a good source of fiber, vitamin C, and vitamin K. It helps improve digestion and increases blood flow which gives your skin a radiant glow. So there you have it, drink POM juice or just eat this Jell-O. 🙂

Ingredients:

6oz Cherry Jell-O (strawberry or raspberry will work too)

1Tbsp Knox Gelatine (unflavored)

2cups Boiling Water

2cups POM Pomegranate Juice (or pomegranate-cherry)

2 cups Fresh Raspberries

1 cup Fresh Pomegranate Seeds

Instructions:

1.Whisk together 6oz package of jello with 1 tablespoon of unflavored powder gelatin to combine, then add 2 cups of hot water. Stir well until it is fully dissolved.

2.Add 2 cups of cold POM pomegranate juice to the mixture and whisk it in. Pour the mixture into a jello mold or individual cups, after the jello is no longer warm, add raspberries and pomegranate seeds and refrigerate until it sets. (2-3 hours)

Why do i need to add more gelatin?

Acidic ingredients tend to soften gels, so you may need to use more gelatin when working with them. Pomegranate juice is more acidic then plain water so if you skip the extra gelatin, your jello may be too soft.

Pomegranate Jello
