Easy No-Bake Mini Cakes

Is there anything better than a no-bake dessert that is trendy, easy, pretty and most importantly delicious? I ran into these chocolate cookies at my local grocery store (Safeway) and as soon as i tried them, i immediately fell in love with them. They are 1. Chocolate! 2. Crispy! 3. Mildly sweet! And 4. They almost taste like the classic Russian spartak cake. (My fave)  I can eat them just plain with a cup of coffee or tea. The picture on the package displayed a cake roll and even included a recipe on the back. I however made my own version, you can view it here.

To fancy things up a bit I created these mini cakes that are very trendy right now but very hassle free. With a few cute berries on the top, It’s the perfect dessert to add to your sweets table at your next gathering. You’ll get asked to share the recipe for sure!

The chocolate cookies are very thin and fragile but once you pipe the cream onto them and let them refrigerate overnight, they become puffier and moist which makes them then very soft and almost melt in your mouth. Adding a tart berry on top just completes everything.

Ingredients:

1 pack chocolate wafers

For the cream:

6oz Sour Cream

4oz Cool Whip

1Tbsp Condensed milk

Instructions:

1. Using a stand or hand mixer, combine sour cream, cool whip and condensed milk. Whip the cream for a few minutes until well combined and is fluffy and pipe-able.

2. Transfer to a piping bag and assemble the mini cakes by layering 3 cookies with the cream.

3. Top with your favorite berries and refrigerate at least 4-6 hours or overnight before serving.

Use the same cream to make a unique No-Bake Chocolate Refrigerator Roll, and the most perfect Strawberries and Cream dessert.

  • 6 oz Sour Cream
  • 4 oz Cool Whip
  • 1 Tbsp Condensed Milk (white sugar is ok)
