Pan Fried Potatoes with Onions
Whenever I’m clueless on what to make for lunch or dinner and I ask my husband for help, he almost always requests pan fried potatoes with LOTS of onions. I don’t mind it at all because what can be better then easy lunch or dinner especially when everyone in the house eats it? (yes, including the kids). Normally you’d make pan fried potatoes with just salt and pepper and no onion, but adding the onion just takes these potatoes to a whole other level. As onions fry, they caramelize and become sweet and they add a wonderful flavor to the potatoes. It is that secret ingredient that wakes up the plain fried potatoes.
Ingredients:
6 Xlarge potatoes
1 large onion
2TB of 10vegetable universal seasoning (or salt and pepper to taste)
1/3 cup olive oil
PS: If you don’t have the universal seasoning, You may use any other of your choice just adjust the amount to your taste. See picture below for my top 3 favorite ones.
Instrustions:
1. Peel and wash the potatoes.
2. Cut the potatoes to your likings (cube or julienne). Chop and add the onion, then add oil and seasonings.
I’ve tried frying with all of these, however the 10 vegetable seasoning is my favorite one. If you don’t have any of these, substitute with seasoning salt or salt and pepper.
3. Mix everything together very well, cover with a lid and fry on med/low heat until potatoes are fork soft or golden brown. Continue mixing from time to time so the potatoes can cook evenly. (Do not overmix so you won’t make a mush) If you like your potatoes more browned or crispy, fry a bit longer between mixing.
Garnish with fresh dill or spring onions (optional)
