Bacon and Shrimp Pasta

This shrimp, bacon and spinach pasta recipe is fresh and full of flavor. you’ll love it finished off with this creamy Parmesan sauce that completes the meal and asks for nothing else.

When one day comes to an end, I always think to myself what I should cook for the next day.. planning ahead is key to a delicious meal. Well for this one I didn’t have to plan too much, just had to remember to thaw my frozen shrimps. I began to plan in my head how I was going to cook it and some ideas just shined through. The day of, I wrote the recipe as I cooked, I had a feeling I’d need it later. It turned out SO good, it quickly became a family favorite until this day. If you love bacon and shrimp and pasta, this recipe is for you!

Ingredients:

2lb shrimp

1lb pasta (your preference)

1lb bacon

2TB unsalted butter

1 small onion

2 cloves of fresh garlic

2 Cups heavy whipping cream (or 1cup heavy cream +1cup half n half)

1 cup Parmesan cheese

1tsp Johnny’s seasoning salt

2 cups fresh spinach

1. Start by cutting the bacon and fry it in a deep skillet or wok on med/low heat until crispy brown.

2. Take out the bacon into a separate dish leaving 1-2TB of fat in the skillet. Then add the shrimps, season with 1/2-1tsp of Johnny’s seasoning salt. Cook until all the shrimps change color. And take them out to a separate dish as well.

3. Meanwhile, cook the pasta according to package instructions, drain and rinse.

4. After the shrimps, to the same skillet add 2TB of butter, add 1 diced onion, 2 cloves of pressed garlic and cook for 1-2min. Then add 2 cups of heavy whipping cream and bring it to a simmer.

5. As soon as the heavy cream starts to simmer, add the parmesan cheese and stir to combine, then add the drained pasta.

6. Once the pasta is in, add the cooked shrimps, bacon and spinach.

7. Mix everything to combine making sure everything is coated in the creamy sauce. Take off the heat.
